European Exploration, need some help.?

I need to know a couple things for this project and can't find the answers anywhere; How LONG did it take the early explorers to sail from Spain to America, obviously they weren't trying to get there, but still how long did it take? What kind of crew did they have aboard? How many people did they bring with them? and I have a kind of rough idea of food they had, but not really certain of it, so if you have that it would be much appreciated also. Thank you very much...
